The Juyondai Ginsen Ginjou is a Japanese rice wine that comes from the Juyondai series. It has a strong ginka fragrance and a sweet rice flavor with a gentle aftertaste. This Japanese beverage uses Yamada Nishiki, a variety of rice that has short grains. This variety is preferred by most brewers because it quickly absorbs water and gets easily dissolved too. The rice is polished down to 50 percent. This means that around half of the outer layer of each grain has been removed through polishing so that the starchy, inner part of the grain is exposed in preparation for the sake making process. And since this is from Juyondai, the water used in brewing comes from a spring that is 25 meters below the ground. Tap water or using pipes are not Juyondai’s thing, all water used in the manufacturing comes directly from the spring.
